These zucchini fritters are great for breakfast, for an on-the-go snack, or even your kid's lunch box!
Ingredients | Serves 2
Organic pasture raised eggs
2-3 tbsp coconut flour
Salt and pepper
Ghee or coconut oil, for frying
Grate the zucchini with a cheese grater and squeeze the moisture out with a cheesecloth
In a large mixing bowl, combine zucchini with 2 eggs and coconut flour. You can start with 2 tbsp and if mixtures feels wet add the 3rd tbsp.
Season with salt, pepper, and herbs of choice (oregano, rosemary, thyme)
Heat a large pan on medium heat with ghee or coconut oil, fry each side about 3 minutes until each side is golden brown and cooked through out.
