Wild Shrimp Mango Ceviche

One of my favorite dishes is ceviche...but I do not eat it often since I like to stay away from raw fish as much as possible! (Don't want any parasites... thank you very much). This recipe you can make it with cooked shrimp and still get the yummy ceviche flavors. It's a great dish to make on a hot summer day as its really refreshing.

Servings: 4


2 lbs wild caught shrimp

1 mango, chopped

¼ red onion, diced

½ cup cilantro, chopped

½ jalapeño, chopped and seeded

1 tomato, diced

1 watermelon radish, thinly sliced

2 avocados, chopped

4 limes

Salt & pepper to taste


1. First boil the shrimp for 1-2 minutes

2. Rinse under cold water and place in a bowl.

3. Add all the ingredients and mix well.

4. Refrigerate for 1 hour.

My favorite way to eat this dish is with a side of tostones cooked in coconut oil! sooo yummy!
