Superfood Green Soup

"Winter" is nearly here in Miami... haha but I am actually starting to crave soups. One of my favorite ways to incorporate greens into my daily diet is by adding it in soups.

Olive oil drizzled on top and microgreens

Ingredients

1/2 zucchini

2 cups broccoli

1/2 yellow onion

2 garlic cloves

1 leek

2 cups chicken bone broth

1/2 cup coconut milk

1 tsp turmeric powder

salt and pepper to taste


Method

1. In a large skillet, heat a few spoons of ghee.

2. Throw in the onion, garlic, and leek and cook until nearly caramelized.

3. Next throw in the zucchini and broccoli (I used frozen broccoli), add the salt, pepper, and turmeric.

4. Add the veggies sautéed into the blender with the bone broth and coconut milk. Blend until creamy.
