Spaghetti Squash with Spinach Pesto and Ground Lamb
I absolutely love to make basil pesto, but sometimes I do not have it in the fridge so I have tried my original recipe instead with Spinach and Collard Greens and both work just great! This recipe is so easy and takes less than 5 minutes.
2 big handfuls of raw spinach, or collard greens
1/4 cup pine nuts (I found organic ones on Thrive Market)
1/4 cup raw virgin olive oil
1/2 avocado (optional, does not need to be used)
Salt and pepper to taste
I place all ingredients in my Blendtec Mini Wildside Jar and voilá!
