Paleo Vanilla Chai Granola

Grain Free, Sugar Free, & Gluten Free!

I like to make my own granola because you decide which nuts and seeds you want and how much sweetener your wish to add. Store bought granolas are really sweet with loads of added sweetener and the nuts are generally not sprouted. The reason why you want sprouted/germinated nuts is because the process of soaking and sprouting neutralizes the phytates in the nuts. Phytates are known to block absorption of calcium, iron, zinc, copper and magnesium and the body may be unable to assimilate these minerals.


Ingredients

-1 cup unsweetened shredded coconut

-1 cup unsweetened coconut chips

-2 cups sprouted nuts (I used walnuts and pecans)

-2 tbsp chia seeds

-2 tbsp hemp seeds

-1/4 cup sprouted pumpkin seeds

-1/4 cup sprouted sunflower seeds

-1/4 cup melted coconut oil

-1 tsp cinnamon

-1 tsp pumpkin spice (ground ginger, nutmeg, cinnamon, cloves)

-1 tsp vanilla extract

-1 dropper of stevia (optional)


Method

1. Preheat oven to 250 degrees Fahrenheit

2. In a large bowl, mix all the ingredients except for the coconut oil & spices

3. In a small pot, melt the coconut oil and add the spices, vanilla, and stevia

4. Lay parchment paper on a large baking tray, spread the nut mix and pour the coconut oil mix on top.

5. Bake for 20 minutes
