Gluten Free Chocolate Chip Cookie Bar

This is by far one of the most dangerous desserts I've ever made... I promise you it taste exactly like a traditional "full of gluten and sugar" chocolate chip bar..soft and chewy! I can only imagine what it taste like with a scoop of ice cream! Wow! Can you tell I'm a foodie?


½ cup butter

2 eggs

1 tsp vanilla

½ cup coconut sugar

1 cup + ¼ cup tigernut flour

¼ cup chocolate chips

½ tsp baking soda

¼ tsp salt


1. Preheat oven to 350°F.

2. Line an 8x8 baking dish with parchment paper.

3. Add the butter, vanilla and coconut sugar and whisk well with an electric hand mixer.

4. Add the eggs.

5. Add the dry ingredients.

6. Fold in dark chocolate.

7. Bake for 20 minutes.
