Gingerbread Loaf

My favorite part about this recipe is that it barely has any flour and the taste just screams Christmas! A slice of this loaf with a nice warm drink is heaven!

Ingredients

1 sweet potato

½ cup coconut flour

¼ cup coconut sugar

2 tbsp coconut oil

1/4 cup blackstrap molasses

4 eggs

2 tsp ginger

2 tsp pumpkin spice (nutmeg, cinnamon, clove)

½ tsp baking soda

½ tsp salt


Method

1. Preheat oven to 350F.

2. Line a bread loaf pan with parchment paper.

3. Place the chopped sweet potato in a food processor and process until its reached rice consistency.

4. Add the rest of the ingredient into the food processor and combine until mix is creamy.

5. Bake for 40-45 minutes.
