Flourless Cinnamon Apple Muffins

I love recipes that don't use flour.... these muffins are a great snack because it has healthy fats, protein and fruit.

Total Time: 35 min/ Servings 10-12


1 cup almond butter

¼ cup coconut nectar or maple syrup

3 eggs

1 tsp vanilla

½ tbsp. cinnamon

½ tsp baking soda

1 cup apples, diced


1. Preheat oven to 350F and line your muffin tray with liners.

2. In a bowl, add the almond butter, syrup, eggs, vanilla, cinnamon, and baking soda. Mix with a spoon.

3. Add ¾ cup of apples and fold them in the batter.

4. Place the mixture on to the muffin tray and top with the remaining apples.

5. Bake for 20-25 minutes.
