I love to have these in the fridge ready for when I feel I need a more protein based breakfast or a quick and easy lunch.
1 lb of ground pasture raised organic chicken from www.myhealthyfoodclub.com
1-2 grated carrots
1 thumb of ginger grated
1 thumb of turmeric root grated
Salt and Pepper, to taste
Cilantro to garnish
Pre-heat the oven to 350°F
In a large mixing bowl, combine ground chicken, grated carrots, ginger, turmeric, salt and pepper.
You can place the mix into a muffin tray or shape into patties
Bake for 15-20 minutes
You can garnish the top with some cilantro or parsley.
