Chicken Muffins

I love to have these in the fridge ready for when I feel I need a more protein based breakfast or a quick and easy lunch.


Ingredients

  1. 1 lb of ground pasture raised organic chicken from www.myhealthyfoodclub.com

  2. 1-2 grated carrots

  3. 1 thumb of ginger grated

  4. 1 thumb of turmeric root grated

  5. Salt and Pepper, to taste

  6. Cilantro to garnish

Method

  1. Pre-heat the oven to 350°F

  2. In a large mixing bowl, combine ground chicken, grated carrots, ginger, turmeric, salt and pepper.

  3. You can place the mix into a muffin tray or shape into patties

  4. Bake for 15-20 minutes

  5. You can garnish the top with some cilantro or parsley.
