Carrot Cake Muffins

Paleo-Gluten Free- Dairy Free


Ingredients


1. 2 cups of shredded carrots (about 2-3 carrots)

2. 1/2 cup coconut flour

3. 1/4 cup coconut oil

4. 4 eggs

5. 1 tsp vanilla

6. 1/4 tsp aluminum free baking soda

7. 1/2 tbsp cinnamon

8. 1/4 cup almond milk, I use New Barn unsweetened

9. 1/4 cup coconut sugar


Method

1. Preheat oven at 350F

2. If you have a vitamix or blendtec, place all ingredients except for the carrots and blend, later mix in the carrots.

3. You can also mix all ingredient with an electric handmixer

4. Bake for 15-20 minutes.
