This is a super simple and yummy recipe that can be a side dish for a meal. It would be nice with a piece of wild salmon, chicken thighs or even grass fed steak. I love butternut squash because it can be used in so many ways and this is definitely a creative way to eat it. It is also high in Vitamins A, E, C, B-complex, and beta carotene, iron, zinc, calcium, and potassium which are all important to keep the immune system strong and healthy.

Ingredients
2 tbsp avocado oil or ghee
2 garlic cloves, minced
6 cups spiralized butternut squash noodles (can also be bought already made at Whole Foods..because it is really tedious to do it yourself)
salt and pepper to taste
¼ cup walnuts, chopped
½ cup Parmesan cheese
¼ cup parsley, chopped
Method
1. In a large saucepan, heat the oil over medium heat and add the garlic and cook until brown.
2. Add the noodles and cook for 5-7 minutes.
3. Once the noodles are ready, serve in a bowl.
4. Add the crushed walnuts, cheese, and parsley.
