Butternut Squash "Mac & Cheese"

During the weekend I like to make more "fun recipes." So I thought why not try to recreate a healthier version of mac and cheese. The typical Kraft style boxed Mac and Cheese is full of horrible ingredients!

I was able to create a delicious healthier version and even better it has a sneaky added veggie that your kids wont even find out. Oh and its still super quick and easy to make, even though it doesn't come in a box. For those who are gluten free like me, I like to use organic brown rice or quinoa pasta.

Ingredients

3 cup butternut squash

1 cup coconut milk

1 tbsp butter

1 tbsp nutritional yeast

salt and pepper to taste

1/2 tsp paprika


Method

1. Bake or steam the butternut squash.

2. Boil the pasta that you are going to use (I used brown rice elbows)

3. Once the squash is ready, place it in the blender with the coconut milk, nutritional yeast, salt, pepper, and paprika. Blend until its pureed.

4. Add butter to your pasta, and then pour the sauce.
