This is one of my all time favorite holiday cookies to bake! The only thing missing is finding a way to decorate them with healthy ingredients... does anyone have any tips?!
Ingredients
100g butter (about 8 tbsp)
2 eggs
1/4 cup maple syrup
1/4 cup coconut sugar
1 tbsp blackstrap molasses
1 tbsp cinnamon
1 tsp cardamom
1 tsp ginger
1/2 tsp ground cloves
1 tsp baking soda
1 + 3/4 cup buckwheat flour
Method
1. In a pot put the maple syrup, coconut sugar and spices to boil until it becomes a syrup and turn off heat.
2. Stir in the butter.
3. Add the eggs and baking soda.
4. Mix it all together and place in fridge for a few hours or overnight. (If you leave it overnight you will need to take out for a few minutes because it will be very hard)
5.Preheat oven to 200F
6. Roll the dough with a rolling pin and cut with gingerbread cookie cutter shapes.
7. Bake for 5 minutes.
