I recently became obsessed with carob, using it in my smoothies so I wanted to try it out in a muffin. Carob is very similar to chocolate in taste but it has NO CAFFEINE which is a huge plus for me because if I eat chocolate at night, I have difficulty sleeping at night.
Carob also has other health benefits such as fiber, high in antioxidants, & calcium.
I usually use coconut sugar or coconut nectar as a sweetener in my baked goods but with the banana and carob, I found that only 1 drop per muffin of stevia was all I needed for added sweetness.
Recipe (makes 10-11 muffins)
2 bananas
1/2 cup coconut flour
10 drops stevia (optional)
1/4 cup carob powder
1/2 tsp baking soda
1/4 cup almond milk (if mix is too thick add 1/4 cup more)
Method
Preheat oven at 350F
Blend all ingredients in a good blender such as Vitamix or Blendtec
Bake for 15-20 min
I topped mine with raw almond butter & hemp seeds as "sprinkles"
