Banana Bread with Blueberry Lemon Zest

Paleo- Gluten Free- Dairy Free


1. 1 cup coconut flour

2. 5 organic pasture raised eggs

3. 2 bananas

4. 1/4 cup coconut oil

5. 1/4 cup almond milk, I use New Barn Unsweetened

6. 1 tsp vanilla

7. 2 tbsp honey or coconut nectar

8. 1 tsp aluminium free baking soda

9. 1 cup fresh or frozen blueberries (don't blend, add at the end)

10. 1 whole lemon's zest (don't blend)


1. Pre heat oven to 350 F

2. In a large mixing bowl, combine coconut flour, eggs, bananas, coconut oil, almond milk, vanilla, honey/coconut nectar, & baking soda. Mix everything with an electric hand mixer or in the blender.

3. Now add the blueberries and lemon zest to the mix

4. Place mix into a tray (I used a loaf tray)

5. Bake for 50-60 min
