Ingredients:
3 hard boiled eggs, chopped
1 avocado, diced
2 tbsp mayo (I use Primal Kitchen)
2 tbsp red onion, chopped
2 tbsp parsley or cilantro, chopped
2 mini red peppers, chopped
1 tsp lemon juice
salt and pepper to taste
1 tsp paprika
lettuce leaves, for servings
Method:
Add all the ingredients to a mixing bowl and combine.
You can serve the salad on lettuce leaves or on a piece of gluten free bread.
