Avocado Egg Salad

This is such a delicious recipe that is not only simple but quick to make. It's a great option for one of those days that you are in need of something easy to make but still nutritious. This can even be a good breakfast option!

Servings 1-2 / Total Time: 20 minutes


3 hard boiled eggs, chopped

1 avocado, diced

2 tbsp mayo (I use Primal Kitchen)

2 tbsp red onion, chopped

2 tbsp parsley or cilantro, chopped

2 mini red peppers, chopped

1 tsp lemon juice

salt and pepper to taste

1 tsp paprika

lettuce leaves, for servings


  1. Add all the ingredients to a mixing bowl and combine.

  2. You can serve the salad on lettuce leaves or on a piece of gluten free bread.
